1. Pasta with Truffles – a classic that never disappoints

The simplest, yet most delicious way to enjoy truffles. The key is in simplicity – quality pasta, butter, parmesan, and freshly grated truffle.

Ingredients for 2 servings:

  • 200g quality pasta (tagliatelle or fettuccine)
  • 50g butter
  • 50g fresh parmesan, grated
  • 1 tablespoon olive oil
  • 15-20g fresh truffle
  • Salt and pepper to taste

Preparation: Cook pasta al dente. In a pan, melt butter with olive oil, add pasta and some pasta water. Remove from heat, add cheese and truffle. Stir until combined.

2. Eggs with Truffles – breakfast for kings

Omelette or scrambled eggs with truffles is the perfect breakfast or quick lunch. Simple, elegant, and incredibly delicious.

Ingredients:

  • 3 eggs
  • 20g butter
  • 10-15g fresh truffle
  • Salt and pepper

For this recipe you need only three ingredients – quality bread, butter, and truffle. Perfect as an appetizer or served with wine.

  • Grate truffle over the bread
  • Drizzle with a little olive oil and season with salt

4. Truffle Risotto – Italian classic

Creamy truffle risotto is a true gastronomic pleasure. It requires a bit more time, but the result is worth every minute.

Ingredients:

  • 300g arborio rice
  • 1L chicken broth
  • 1 cup white wine
  • 1 small onion, finely chopped
  • 50g butter
  • 80g parmesan
  • 15-20g fresh truffle

Preparation: Sauté onion in butter, add rice and stir until translucent. Add wine and stir until evaporated. Slowly add broth, one cup at a time, stirring constantly. Finally add cheese and truffle.

5. Quick Truffle Pasta

Tips for working with fresh truffles

  • Storage: Wrap truffles in a paper towel, place in a sealed container and keep in the refrigerator for up to 7 days. Change the towel daily.
  • Grating: Use a fine grater for best results. It's best to grate truffle just before serving.
  • Don't cook white truffle: White truffle loses aroma with heat. Add it to dishes at the end of cooking or serve raw.
  • Black truffle: Can be cooked, but is still best when added in the last minutes.
  • Fat helps: Truffles release best in fat – butter, oil, or cream.
